Protected Geographical Indication
"Sobrasada de Mallorca" holds the PGI (Protected Geographical Indication) recognition from the European Union — a distinction that guarantees the product has been made in Mallorca following traditional methods with the appropriate raw materials.
This protection assures consumers that the sobrasada they purchase meets defined quality standards and that its origin is authentically Mallorcan.
There are two distinct PGIs:
- Sobrasada de Mallorca: made with pork from authorised breeds.
- Sobrasada de Mallorca de Cerdo Negro: made exclusively with meat from the native Porc Negre Mallorquí breed, considered the highest quality variety.
The Regulatory Council
The Regulatory Council of the PGI Sobrasada de Mallorca is the body responsible for ensuring compliance with the quality and origin requirements that define the sobrasada protected under this designation.
Its main functions include:
- Quality control: supervision of the entire production process, from raw material selection to the finished product.
- Certification: issuing the seals and counter-labels that identify the protected sobrasada.
- Promotion: spreading the culture of Mallorcan sobrasada in national and international markets.
- Legal defence: legal protection against the improper use of the designation.
How to recognise an authentic Sobrasada de Mallorca
To be sure you are purchasing a sobrasada protected by the PGI, look for the following on the packaging:
- The PGI seal with the official "Sobrasada de Mallorca" logo.
- A numbered counter-label issued by the Regulatory Council.
- For the black pig variety, the additional seal identifying the Porc Negre Mallorquí breed.
Production requirements
Sobrasada protected by the PGI must meet, among others, the following requirements:
- Be made entirely on the island of Mallorca.
- Use selected pork, paprika (pimentón), salt and authorised spices.
- Respect the minimum curing times established for each format.
- Pass the analytical and organoleptic tests of the Regulatory Council.
